You don't have to be vegan to enjoy this. This is primarily for MUSHROOM lovers, but vegans can rejoice, because this totally works for you, too! Enjoy some Lions Mane Vegan Tuna! This wont taste EXACTLY like tuna, but it's made like a tuna salad and will have a little of the seafoody flavors you might want.
Ingredients:
1/2 lb fresh Lions Mane mushroom 2-3 tbsp vegan mayo (you can use regular mayo, but vegan mayo is just strictly better) 1 tbsp dijon mustard
1 tbsp dill pickle relish
Splash of lemon juice
Dry dill to taste
Cooking oil or fat of choice

Shred the lions mane and then into a hot oiled pan add the shredded mushroom. Sautee until it no longer spits water out when you press it with a spatula. It should get fairly brown and dry looking. Set aside to cool. In a bowl add all of the other ingredients and then toss your cooled lions mane into the dressing mix. Add to a sandwich with the toppings of your choosing. Enjoy!
