Instructions for your Mushroom Noodle Bowl

  1. Prepare your ingredients: Slice the mushrooms, mince the garlic, and grate the ginger.

  2. Cook the noodles: Follow the package instructions to cook your chosen noodles. Drain and set aside.

  3. Sauté the aromatics: In a large skillet or wok, heat a drizzle of oil over medium-high heat. Add the sliced mushrooms and cook until they are golden brown and have released their moisture. Add the minced garlic and grated ginger and cook for another minute until fragrant.

  4. Make the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, brown sugar (if using), and vegetable broth/water. If you like a little kick, add the chili flakes here!

  5. Combine: Pour the sauce over the mushrooms in the skillet. Bring to a gentle simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly.

  6. Add noodles: Add the cooked noodles to the skillet with the mushrooms and sauce. Toss everything together until the noodles are well coated.

  7. Serve: Divide the noodle mixture into bowls. Garnish with chopped green onions and a sprinkle of toasted sesame seeds. Enjoy immediately!

Tips and Variations

  • Add protein: This dish is fantastic with pan-fried tofu, tempeh, or even some leftover cooked chicken or shrimp.

  • More veggies: Feel free to toss in some sliced bell peppers, spinach, or bok choy when you're sautéing the mushrooms.

  • Spicy kick: For extra heat, add more chili flakes or a dollop of sriracha to your bowl.

  • Nutty flavor: A spoonful of peanut butter or tahini in the sauce can add a delicious creaminess and depth.
