Oyster Mushroom Sandwich - easy and filling!

  • 1 tablespoon olive oil

  • 1/2 pound oyster mushrooms, sliced

  • 1/4 cup chopped onion

  • 1/4 cup chopped red bell pepper

  • 1/4 cup chopped green bell pepper

  • 1/4 cup chopped fresh cilantro

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 4 slices bread

  • 2 tablespoons mayonnaise

  • 2 slices tomato

  • 1/2 cup shredded cheddar cheese


  1. Heat the olive oil in a large skillet over medium heat.

  2. Add the oyster mushrooms, onion, red bell pepper, green bell pepper, cilantro, salt, and black pepper to the skillet.

  3. Cook for 5-7 minutes, or until the mushrooms are browned and the vegetables are tender.

  4. Spread the mayonnaise on one side of each slice of bread.

  5. Top two of the slices of bread with the mushroom mixture, tomato slices, and shredded cheddar cheese.

  6. Place the remaining two slices of bread on top, mayonnaise side down.

  7. Heat a large skillet over medium heat.

  8. Grill the sandwiches for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.

  9. Serve oyster mushroom sandwich immediately.
